The Rotisserie technique is an ancient and medieval roasting technique using a sword, ideal for large pieces of meat, poultry, etc. It is the most primitive technique, where between the product and the embers (heat source) there is no barrier, frying pan, casserole or grill.
The golden tones are more pronounced, and the arrangement of the pieces on the swords means that the product is bathed in its own juice. The use of wood to give flavours and aromas is much broader, in addition to its strong visual component.
